Banana Steak Sauce

This sauce is a quick way to give a very special variation to steak, meatballs, meatloaf or just to add to mince (ground beef).

1. Saute a big onion in some olive oil.
2. Add a diced green, red, orange or yellow bellpepper of your choice and saute with the onion.
3. Add a diced ripe banana (usually the one that no-one wants to eat fresh because it is overripe already).
4. Add 1/2 cup stock or white wine so that the flavours of all the ingredients can talk to each other and the banana can disappear in the mixture.
5. Bring the sauce to the desired consistancy by either simmering the extra liquid away or add a teaspoon or arrowroot in three tablespoons of water to thicken the sauce.
