Butternut SoupThis is always a big winner! 1. Melt 3 tablespoons Butter in a large saucepan. 2. Lightly saute a large chopped onion and then add the finely grated rind of an Orange as well as 1.5 pounds of peeled and diced Butternut. 3. Add 3 cups Chicken Stock and salt and pepper to taste. 4. Bring to the boil and then simmer over low heat for 30 minutes - the butternut must be tender. 5. Purée in a blender and return to a clean saucepan. 6. Mix 1 tablespoon of Cornstarch (maizena) with three tablespoons of Milk and then add another cup of Milk so that there are no lumps. 7. Add this to the soup and bring slowly to the boil - then simmer for 5 minutes. 8. Taste test the seasonings. 9. Pour into a pre-heated tureen and add 1/2 cup of Cream. 10. Serve immediately.
