SconsThis very easy and simple recipe yields just the very best of scons. Serve them with strawberry (or another fruit) jam and whipped cream! 1. Sift together 2 1/2 Cups Flour, 4 Teaspoons Baking Powder and 1/4 Teaspoon Salt. 2. Add 180 grams Butter and rub into the flour until crumbly. 3. For sweet scons add 2 Teaspoons Sugar. 4. Mix a very large Egg and 100ml of Milk. 5. Add the egg mixture to the flour mixture and cut the two together with a knife just untill the soft dough starts following the knife - it must bot be over-mixed. 6. Roll the dough out not less than half an inch thick and cut into shapes. Brush some milk on top of the scons. 7. Bake on a cookie sheet for 12 to 15 minutes at 375ºF. |
