Bobotie – like meatloaf on steroids


BOBOTIE

A sweat flavourful meat dish from South Africa
 

  • 2 lb Ground Beef
  • 2 Onions
  • 1 thick slice Bread
  • ⅓ cup Milk + ½ cup Milk
  • 2 Eggs
  • 1 tablespoon Curry Powder
  • 2 tablespoons Sugar
  • 2 t Salt
  • 2 t Turmeric
  • Juice from 1 Lemon
  • Slivers from about 6 Almonds
  • ½ cup Raisins
  • 4 Bay Leaves or Lemon Tree Leaves or the Zest from one Lemon
  • ½ cup Chutney or Apricot Preserve
  1. Slice the onions and fry in a little oil.
  2. Take out of the pan and fry the ground beef.
  3. Crumb the bread and get it wet with the ⅓ cup Milk.
  4. Mix all the ingredients except the leaves, one egg and the ½ cup milk.
  5. Put in a greased glass baking dish so that it is about two inches thick.
  6. Stick the leaves into the mixture or sprinkle the zest on top.
  7. Bake for 20 minutes at 350°F.
  8. Beat the egg and ½ cup Milk and pour over the meat.
  9. Bake for a further  30 minutes at 350°F.
  10. Serve with rice, a sweet chutney and freshly sliced bananas.  [You can slice the bananas and serve them in a little milk to prevent them from going black and nasty.]

 

Good Beef Pot

This came out so nice that I decided to make the recipe permanent by rcording it.  No quantities – if you need quantities you are not a mature enough cook to attempt this.

  •  Fry together ONION, GARLIC and chopped BACON.
  • Add cut up (cubed) HAMBURGER patties or just some GROUND BEEF with SALT of course.
  • Add finely chopped SUNDRIED TOMATOES, a little BROWN SUGAR and a squirt of TOMATOE KETCHUP.
  • Add a spoonful of QUINOA and a little water.
  • Add cubed YAM and POTATO.
  • Let it all simmer until the quinoa, potato and yam ate all soft.

Serve with rice.

The queen of England does not eat better than this!

GI Cookies

GI Cookies (“Troepekoekies”)

Translated from “Huisgenoot Wenresepte 2” by Annette Human

This recipe makes 11-12 dozen.

Mix together:

  • 5 cups Flour
  • 4 cups shredded Coconut
  • 3 cups rolled Oats
  • 1 cup Bran
  • 1 cup chopped Nuts (Pecan or your favourites)
  • 1 t Salt

In a mixer, beat together until creamy:

  • 1 lb Butter
  • 4 cups Sugar
  • 4 Eggs
  • 2 t Vanilla Essence

Add this to the dry ingredient mixture.

In a large glass bowl, heat in a microwave oven for 40 seconds:

  • ¼ cup Honey

Add to the warm honey:

  • 4 t Baking Powder
  • 3 t Baking Soda

This mixture will form a very thick foam, which you add and mix into the rest of the ingredients.

Lastly add and mix in:

  • 4 cups All Bran Cereal

Place golf ball size balls of dough 2” apart on a cookie sheet and do NOT flatten them.  Bake at 350°F for 18-20 minutes.  They should not brown too much.

The dough can be kept in a fridge under klingwrap for two days if you cannot bake them all at once.

Sout & Peper

Metode
Rasper kaas en Weense Worsies. Versnipper Bacon. Meng al die ander bestanddele en voeg by kaas mengsel. Verdeel in gesmeerde tertpanne. Bak vir 40 minute teen 180º C. 

Wenk
Hierdie tert is ook lekker saam met ‘n mengel slaai as ligte middag ete. Gooi die mengsel in kolwyn pannetjies, strooi pietersielie en rooipeper oor, indien verkies. Bak nou teen 180º C vir 10 tot 15 minute. Lewer sowat 5 dosyn.

Pizza Muffins

Pizza Wedges

Looks like  a cake – pastes like a pizza! Versatile and delicious.
Serve with sour cream,  pizza sauce or Avocado  Ranch Dip.
Can also be cut into slices to use in stead of bread for spicy sandwiches.

Cooking oil 1 tbsp. 15  ml
Chopped onion   1 cup 250  ml
Garlic clove, minced 1 1
Paprika 2 tsp. 10 ml
Pepper 1/2  tsp . 2 ml
Chopped deli pepperoni  slices
3/4 cup 175  ml
All-purpose  flour 1 1/2 cups 375 ml
Baking powder 2  tsp. 10 ml
Salt 1/4 tsp. 1 ml
Large eggs, fork-beaten
4 4
Grated Parmesan cheese
3/4 cup 175 ml
Tomato Sauce 1/2 cup 125 ml
Hard margarine (or  butter ), melted
1/3 cup 75 ml
Chopped fresh 0regano leaves (or 3/4 tsp., 4 ml, dried)
1 tbsp. 15 ml

  • Heat cooking  oil  in medium frying pan on medium. Add onion. Cook for 5  to 10 minutes, stirring often, until softened.
  • Add garlic, paprika  and pepper. Heat and stir for 1 to 2 minutes until fragrant.
  • Add  pepperoni. Heat and stir for about 5 minutes until pepperoni  is lightly browned. Transfer mixture to small  bowl. Cool .
  • Combine  flour, baking powder and salt in large bowl . Make a w ell in center.
  • Add pepperoni mixture and remaining 5 ingredients to well. Stir until just moistened. Spread evenly in greased 9 i n ch  ( 22 c m) round pan. Bake in 375°F (19O°C) oven for about 20 minutes until golden and wooden pick inserted in center comes out clean. [Bake at 350ºF (175º) if you use muffin pans.]  Let stand in pan for 5 minutes before removing to wire  rack to cool. Freezes well. Cuts into 8 wedges.
  • 1 wedge: 346 Calories; 21.8 g Total Fat ( l1.1 g Mono, 2.5 g Poly 6.8 g Sat),· 127 mg Cholesterol;

    24 g Carbohydrate; 1g Fiber,· 13 g Protein; 863 mg Sodium

    In a large pot, combine 1/4 lb butter (margarine) with 1 can condensed milk and two cups of sugar.
    Bring to a slow boil, STIRRING ALL THE TIME!   It just takes seconds for the mixture to start burning if you do not stir it.
    After a few minutes you will see the mixture get caramel like in color and thicker.  When you put a few drops on a cold plate, it will get fairly hard and fudge-like.
    At this point you can turn the heat off and vigorously beat the mixture for two minutes (I use a wooden spoon throughout).
    Pour the mixture out into a glass plate that have been sprayed or smeared with butter.  Let is sit for ten minutes and then cut it in squares.  Let it cool completely so that it is hard and see how long it lasts…!

    Mousse Recipe

    Chocolate Mousse

    Neem 18 marshmallows (nie die geure van druiwe en mango en daai twak nie, nee, die gewone wittes en pienkes), ‘n groot blik Ideal Milk, en ‘n slab tjoklit, by name Midnight Velvet.  [You need 18 marshmallows – not the funny flavors like grape or mango, just the pink and white ones – a large can of evaporated milk and a slab chocolate – such as Midnight Velvet or Cadbury Milk Chocolate]

    Sit marshmallows, tjoklit en 100ml Ideal Milk in ‘n glasbak, en smelt stadig in die mikro.  Klits gereeld met ‘n draadklitser om die klonte uit te kry, en te sien dat alles smelt en vermeng.  [Melt marshmallows, chocolate and 100ml of the milk in a glass bowl in the microwave (slowly) – stir frequently so that the mixture becomes smooth.]

    Verkoel die res van die Ideal Milk, en sodra die mikro-mengsel afgekoel is, klits jy die Ideal Milk styf, en meng in by die tjoklit-mallows.  Dit is ook nou net hier waar ek vir ekstra geur ‘n doppie KWV inwerk.  Verkoel en val weg.  [Refrigirate the rest of the evaporated milk,  beat it to a thick consistancy and add to the chocolate mixture as soon as that has cooled down too.]

    Fresh Grape Divine

    Mix together 4 pounds of seedless grapes – fresh ones – with

    8oz Cream Cheese

    8oz Coolwhip

    8oz Sour Cream

    1 tsp lemon juice

    1 1/2 cups powdered sugar

    Just enjoy!

    National Pudding

    This is a dessert, in American terms, also known as “Nasionale Poeding” in Afrikaans.

    • Put 6 cups of Water and 2 cups of sugar in a large pot (with a lid) on the stove over a medium heat so that the sugar can dissolve.
    • While that is going on, stir together the following:
    • 2 Eggs
    • 2 tablespoons of soft butter/margarine
    • 4 tablespoons of Apricot Jam
  • Sift together the following:
    • 2 cups Flour
    • 2 teaspoons Ground Ginger
    • 2 teaspoons Cinnamon
    • 1/2 teaspoon Salt
  • Add this to the butter mixture, but do not mix all the way through (this will make the next step easier).
  • Dissolve 3 teaspoons of Baking Soda in 1/4 cup Milk and add this to the dough.
  • Now you can mix it through.
  • Bring the sugar water to a boil and add tablespoons of the soft dough to the boiling syrup. These will float and when the surface is full, just drop the next spoons of dough in between.
  • Place the lid on the pot and turn the heat down to a low simmer – NEVER LIFT THE LID OFF THE POT !!!
  • Guard the pot for 30 minutes (family members are bound to be drawn to the smell and will want to come and peek under the lid!).
  • You can serve the desert just as it is, or you can add some hot or cold custard (write to me if you do not know how to make this), or thick cream. It even tastes very good cold.
  • Quickie Bars

    Graham Crackers
    1 Cup Brown Sugar
    1 Cup Butter
    1 Cup Chopped Nuts – Optional
    12 oz Chocolate Chips – Optional
    Place whole Graham Crackers in a buttered jelly roll pan.
    Boil butter and sugar for 3 minutes.
    Fold in the nuts.
    Spread over Graham Crackers.
    Bake 10 minutes at 325 degrees Fahrenheit.
    Frost with melted Choc chips.
